Inspired by BBC's own salad for simmering summers and barbecues, I've tweaked this recipe several times to include Prophetic (Sunnah) ingredients. Everything  Prophet Muhammad ﷺ ate was pure.

As this creates a large bowl of food, it can be adapted further as a main meal with a palm-sized salmon portion on the side, stuffed into sandwiches and upgraded with toasted almonds, or walnuts, Pakistani chutney or as a side to rice. It's very adaptable and filling for the upcoming fasting days in March 2023.

Sunnah ingredients to add: cucumber, pomegranate seeds, Zam Zam water in the dressing and olive oil and vinegar.

• Halal/Vegan • Prep time: 12-15 mins • Cooking time: N/A • Serves 4+

Ingredients - in order of use
  • 2 avocados, peeled & sliced
  • 1 whole cucumber
  • 1 large red onion
  • 2 yellow bell peppers
  • 6-8 small radishes
  • 400g black beans, drained (2 cans)
  • 1 large handful of rocket/arugula;
  • 2-3 large handfuls of baby spinach
  • 500g heritage (or cherry) tomatoes, deseeded and chopped into chunks 
  • 1 mango, chopped into chunks
  • 100g feta, crumbled;
  • 1 handful of pomegranate seeds
Method

  1. Sprinkle a little Himalayan salt on the sliced avocados to prevent browning.
  2. Halve the cucumber lengthways, seeds scooped and sliced at an angle.
  3. Finely slice the red onion, peppers and radishes.
  4. Toss the above with the beans, rocket, chopped spinach leaves and tomatoes into a large bowl.
  5. Sprinkle the mango, avocado and feta chunks on top and the pomegranate seeds.
For the dressing, (I mean, you gotta make this dressing) simply blitz all the following ingredients until smooth:

  • 1 large bunch mint & coriander
  • A small bunch basil
  • 1 green chilli, deseeded
  • 1 garlic clove
  • 100ml extra virgin olive oil (go Palestinian)
  • 2 limes, zest separate juiced 2 tsp honey

Serve alongside any main dish - salmon, chicken, veggie burgers
