Deliciously hearty flavoursome meals to try while travelling abroad to Morocco - or thereabouts!

A healthy diet in Ramadan is about more than just weight loss, it’s important for improving your concentration and energy levels and makes you more productive so those long fasting days aren’t so draining. As motivation to stick with it, I have put together a menu of holiday inspired healthy lunches I can look forward to eating for Iftaar.

Healthy Moroccan Inspired Lunches

MONDAY
Grilled Hake with a hot Halal chorizo (try from Omeya), bean and broccoli salad. If you want to take this to the office, switch the hake for flakey oven baked salmon and enjoy cold with a lemon and dill dressing. For carb-cravers try grilled chips on the side.

TUESDAY
Spicy tomato soup with olive bread and crumbled goats cheese. This is great served hot or even as a cold gazpacho.

WEDNESDAY
Courgette and red onion frittata. This is a great idea for an evening meal that you can save the left overs to enjoy on your lunch break the next day. Serve with a fresh crispy salad and baby tomatoes.

THURSDAY
Homemade green olive and almond spread with rice crackers and a Spanish orange and apple fruit salad. Wrap up in a wholegrain wrap.

FRIDAY
Treat day! Saucy bean burritos with aubergine and goats cheese served with a diced watermelon salad.





The great thing about Spanish/Moroccan dining is that with tapas menus you get to sample small portions of beautiful foods so you’re not over indulging in any one thing. This is a great way to get a healthy mix as you can allow yourself a little treat of cheese and carbs but complement that with a range of healthy veggies and fruits. I think theme menus are great and I definitely recommend trying motivation for Ramadan like this for yourself.
