Eat less, eat better, eat what you love. Pizza.

Not your typical full-fat cheese dish, this naan pizza is inspired by Max Lowery's recipe in his book 'The 2 Meal Day'

Lowery promotes intermittent fasting (like Ramadan) as a long-term solution to better health and weight loss. Coupled with regular exercise, this pizza is a healthier meal that can benefit your diet and waist line. Insha-Allah (God willing!).

• Halal/Vegan • Prep time: 5 mins • Cooking time: 10mins • Serves 1 (multiple quantities per serving)

Ingredients - in order of use

• 1 tablespoon of oil
• 1/4 (quarter) sliced courgette/zucchini
• 1 tablespoon of tomato puree or paste
• 1/4 teaspoon each of dried oregano, garlic powder, flax seeds
• Sliced bell peppers or snacking peppers
• 3-4 sliced cherry tomatoes
• 20g grated cheddar cheese (optional)
• Fresh mozzarella, torn
• Fresh basil, sliced julienne (fancy)
• 1 pitta bread or 1 plain medium naan

Method
1. Heat the oil on medium-low and pan fry the courgette slices for 2mins until a little golden, i.e. half cooked.

2. Mix the tomato puree with oregano, garlic powder and flax seeds. Season to taste. You can also use half a fresh clove of garlic instead of powder. It's pretty potent!

3. Splash water onto one side of the pitta and grill for 2-3 minutes till browned. The water helps steam and cook the pitta through. Turn the pitta over and spread the tomato mix on top to the edges.

4. Layer the courgettes, peppers, tomatoes, cheese, and basil on top. Grill again on high for 3-4 minutes max, checking every minute to prevent burning. When the cheese has bubbled and the edges are a little crisp, take out.

Serve with salad and eat immediately.
