The last time I made frozen dessert it was called a smush-in. This is definitely an upgrade. Behold, the fruity delights of a homemade popsicle to keep you 'cool' in Ramadan.

Choose from strawberry, blackberry and yoghurt, and raspberry lemonade.

Makes 16 popsicles, 8 of each flavour (half the ingredients for 4 of each) • Halal/Vegetarian • Prepare 3-4hrs before serving (no cooking required, thank Allah)

Ingredients for strawberry-blackberry popsicle
     • 350g hulled strawberries
     • 50g low fat yoghurt
     • 150g blackberries
*If the berries are tart, add 1 teaspoon of ground cane sugar or honey

Ingredients for raspberry lemonade popsicle
     • 1 tablespoon of freshly squeezed lemon juice
     • 300g raspberries (frozen work fine)
     • 50g low fat yoghurt
     • fizzy lemonade or soda water

Only buy fruit for that day - store in a cool place and share your desserts

Method - strawberry + blackberry
  1. Blend the strawberries into a thick smoothie (I got lazy and used a potato masher)
  2. Mash up the blackberries with a fork and mix with the yoghurt to a gloopy consistency. I think whizzing the blackberries with a hand blender will produce a better, smoother texture.
  3. Dollop a teaspoon full of the strawberry mixture into your popsicle mould (just fill halfway), then fill to the brim with the blackberry-yoghurt mix.
  4. FREEZE for up to 4 hrs. Pour a little hot water over the frozen moulds to release the frozen popsicles. 
Hmmm, lovely fruity yoghurty flavors...

Method - raspberry and lemonade

  1. Again, mash up the raspberries with the lemon juice and the yoghurt to a thick pasty consistency.
  2. Pour a little homemade lemonade into the popsicle mould. You could freeze this first to create a layered popsicle, then add the raspberry afterwards. OR dollop a tablespoon of raspberry-yoghurt mix into the lemonade
  3. FREEZE for up to 4 hrs. Release from mould and serve for the hot summer Iftaar meals in Ramadan!
