As-salam`alaykum and eco-jihad all 'round.

So, I wake up this morning at fajr prayer to pecking birds, squirrels hanging from the bannisters and a bee colony strutting around as though they owned the place.

I love Allah's creature, but this was an infringement of my sleep! I didn't hose them down, I made dua instead. It strongly reminds me of Animal Farm.

I also woke to find a wonderful parcel lodged in the letterbox, inside which were two edible delights from a good friend and eco-Muslim from Utah, Jessica Rugg.

Usually I'm okay with ingredients and can pick out most flavours in a dish, but this one's got me stomped. Rolled into flapjack style bite-size balls, it's made from oats, raisins?, brown sugar, dates, cinnamon, butter.... and is that figs? Nope.

Jessica! Thank you so much, shukran, for this lovely gift and the peanut butter slab - my family loved it and ate it all.

Tell me, did I any of the ingredients right?

    Close.  There is no sugar in it.  From memory, I know it has bananas, oats, dates, cinnamon, vegan butter (That's butter made without milk.  I used Earth Balance Original - http://www.earthbalancenatural.com/#/products/original/.), baking powder, salt, vanilla extract (I used the fake stuff 'cause I couldn't find the real stuff minus alcohol).  That's all I remember.  It took about 15 minutes to throw together and everyone seems to really like them.

  2. Jazakallah! Getting vanilla without alcohol is a challenge in stores here too; I buy the whole pods to immerse in sugar for flavour. Vegan butter sounds interesting - how does that affect the nutritional value?

  3. I don't have the details on how it compares to butter as we don't have any right now.  I also don't know that much about nutrition but I think it would be comparable to cooking with vegetable or olive oil instead of butter or ghee.

    I can tell you how it compares to a non-vegan vegetable oil spread.  We'll use Country Crock's Original variety (http://www.countrycrock.com/Spreads/Original.aspx) and Earth Balance linked to in the previous post.
